The head is black with a generous amount of grey/white added in, with the rest grey/white. This is to show the age of the wolf (he did kill a very old former Alpha), since canines like humans will go grey as they age. It also says that it is old and mangy? if your model has the wolves head on aswell as the skin you could always do it as a grey ish with the muzzle being all white and stuff like old dogs get?
