Since the trenches are just ditches in the ground, they would still be considered "ground level" I believe. Come to think of it, this would make a great demonstration in my General Relativity lectures on curved space-time... Short of keeping a piece of string (or equivalent) exactly 24" in length with you whenever you play, I'm sure most people won't be bothered that you aren't measuring the line to precisely follow the contours of the table.
