Gloss varnish increases the specular reflectivity of the surface and decreases the diffuse. This means colours will look darker from most angles, but 'hard' highlights will appear very bright. It's a *smooth* surface. So good for metals, and as a surface to decal on.

Matt varnish increases the diffuse reflectivity of the surface and decreases the specular. This means colours will look lighter from most angles (pastel like). It's a rough (dusty) type surface, so good for cloth, dry mud, and absolute rubbish to try and decal on.

Satin is half way between the two and is closest to the 'natural' paint finish. Should generally be your go-to top coat. I wouldn't advise decalling on it.
