Are taking about real peasants or the Knight World's infantry defense force?

Either way, it would vary between Knight Worlds but I think while Cadians may fit the latter, WFB Empire Free Company or Flagellants may be more suitable for the former.

i meant the peasant peasants as in farmer people.

You can always go all out and buy bretonnian men at arms from the warhammer battle range... before they disappear ^^

You can then try and model them with lasguns and 40k stuff

For Knight World infantry, the ornate armor of the Tempestus Scions matches the Knights very well. I have a unit kitbashed with Skitarii Vanguard heads for this very purpose.

 

For commoners, I have to agree with the above. If you want large numbers, a combination of WHFB Free Company, Flagellants and Men-at-Arms is a good mix. For small numbers (objectives, display bases, maybe a combat patrol) I would use Huntsmen.

 

EDIT: I assume you're going for an Imperial-aligned medieval-style aesthetic, due to your choice of "peasants". For Mechanicus-aligned worlds, WHFB Engineers mixed with 30K Tech Thralls and/or Solar Auxilia would be a good bet.
