The Forge World books generally have a comprehensive list of known chapters, however they typically leave room for the player to come up with their own.

 

I'd check out the Warhammer 40,000 Wiki as well, as they usually have the information available. The website is trash for remembering to use citations, though.

It depends greatly on the Legion in question. Some of them struck rigidly to having them from the military perspective like the Ultramarines or for estoric reasons like the Word Bearers. Others like the Sons of Horus/Blood Angels/Night Lords kept company level as the highest digression of authority and left it at that. It would help greatly if you informed us what Legion in particular you're looking at? 

 

Just as a starting point the Ultramarines had 25 Chapters, each with a nominal strength of 10,000 men

There's the Chapter of the Flayed Hand? They were at Calth. Get a nice little blurb in Tempest too. For the WBs the chapters had some sort of metaphorical meaning tied in with something more practical. For example the Serrated Sun was based on a Colchisian constellation and the concept of the sun/sky containing danger - their specialisation was drop pod assault

Death Guard had 7 Great Companies (Chapters) that were further subdivided.

 

Word Bearers had a Bunch though not all have their names listed.

 

I don't think each of the Death Guard Great Companies were chapters. I think that each Great Company was divided into chapters. There's a dreadnought in Betrayal that is mentioned as having belonged to the 19th Chapter of the 1st Great Company.

 

For what its worth I made my Death Guard part of the 11th Chapter of the 6th Great Company. I dont think its actually explicitly stated anywhere what the detailed organisation of the Death Guard was. Betrayal mentions that ideally each Great Company was to have 70,000 legionaries for a total of 490,000 although this number was never close to being achieved.
