A chapter contained multiple companies. For instance, the 1st chapter contained companies 1-4(i believe), each company holding 1000 astartes

search google images for space marine legion organisation, the first image there gives you the basic lay out of most legions, the page hosting the image will tell you the strength of the Ultramarines as for how they differed from the prescribed set up they pretty much didn't, Black Book #5 goes into all the details
