I use army painter sprays and use it as pseudo primer (for the plastic kits).

Have used black, white and uniform grey all successfully so far on test models.

My "fast" painting uses uniform grey as step 1 now

 

I use the paint pots after that (base...layers...washes...etc)

I would recommend you do yes.

 

Paint sticks much better which lets you use thinner coats which keeps detail good.

The end result of your model also changes based on if you undercoat in black or white (darker/lighter color). Or grey for more neutral (I prefer grey because light colors of black tends to suck.

Always undercoat. GW make a primer that you can paint on with a brush, but personally (and the general consensus is) use a spray can, it gives a good smooth coat to start. Then the rest of your layers will be nice and smooth (as long as you follow the golden rules [thin your paints and two thin coats of paint is better than one thick one]).
