If they normally have blue armor and black symbols, then the ones in black armor have blue symbols to tie it all together. OR, do the armor black, but the shoulder pads blue, and leave the symbols black. So you can keep the normal blue with black symbol even on those models with black armour. Just for example, here is my Silver Templars Apothecary. Armour is white instead of silver but the single pauldron retains the yellow of the normal armour.
