I want to target a multi model enemy unit. the models I have line of sight on are out of range but there are models from that same unit within range although out of line of sight. Do you have to draw range and line of sight to the same model? Can I shoot it?

Or, I want to shoot a large enemy vehicle where the rules state to measure from the hull. The visible parts of the hull are out of range but there are non visible parts of the hull within range. Can I shoot it?

Per the BRB, to target a unit you must have a model both within range and line of sight. This is the "Choose Targets" section of the rules for the shooting phase. So on the first example you cannot shoot them, but in the second example you can.

For the multimodel target, I can see models in the target unit but those ones are out of range, however there are other hidden models from the same unit within range

For the single large target, I can see it but the part I can see is out of range. There are parts of it though within range I just can’t see the parts of the model in range. Think like a long Doomsday Ark pointed away from me where the nose is visible but outside my range. The rear of the Ark is well within range but hidden behind a wall.

Thanks Nemasor, I agree with you. I had an opponent argue that the Choose Targets section doesn't specify that it has to be the same model within range and line of sight. "I can see that model, and I'm within range of this model." But the grammar of the sentence is clear. "In order to target an enemy unit, a model from that unit must be within the Range of the weapon being used (as listed on its profile) and be visible to the shooting model."

There was a recent Vanguard Tactics video where Steven is discussing a cheating opponent who said Steven couldn't shoot a unit because of this interaction, and the TO ruled in Steven could shoot it. So it's important that competitive players know correct wording.

With the vehicle, the rules don't really care about what part of a model is within range.  If the model is partially within range, it is in range (unless a rule says it must be 'wholly' within range).  If the model has partial line of sight, it has line of sight.
