I have the original Vraks books and the revised volume from 7th edition. From what I've seen there are small fluff changes like single paragraphs and sentences, some of which offer new but overall trivial information. One notable change I spotted in the new Vraks book was that the Sisters of Battle were the ones who exposed the heresy on Vraks and tried to stop it. In the original version they were unaware and taken by surprise when the world fell to the renegades. Also, since the revised edition collects all three books a lot of content was compressed or cut. For example the first space battle in orbit over Vraks used to provide some backstory for the Imperial Navy captains involved, but the new book focuses entirely on the action.

I believe that there are probably less changes in the other Volumes since those have probably about the same page count.

In all three (Taros, Anphelion and Vraks) the pages gained background/colour in the 2nd Editions. The originals are all white.

 

In-universe documents are usually reworked altogether, as well as in-universe vehicle stat pages. Same information, more or less, but with new layouts, etc.
