So I am writing a few lists and I am very mixed on adding Rhino's to my force.

Not that I think they are bad, its just that I did a Transport based army in 40k and I am thinking of something a little different for Heresy, but I am just not quite finding the data on how powerful or not that they are.

For reference, I am playing Wolves, with the outflank RoW, and focusing on Infatry, Dreadnoughts, and Rapiers, to make a mountian fighting force. But is this a good idea, or are Rhino's just a must have for an assault force, or should I focus on getting as much cover saves as possible as I run forward?

I think the melee legions don't want Rhinos as much as assault vehicles. Can't charge after disembarking without that ability. Wolves also have run and charge so they have less reason to take cars than other legions do.

I think you want to run tactical squads (or equivalent) at 20 man, or 10 in a rhino.
The rhino offers immunity to bolters, barring any special rules, and can double up as an emergency heavy weapon, and a 20 man squad has enough bodies to suffer casualties and still be a threat.

Rhino's can also be very useful for LoS blocking and restricting movement channels.

It is interesting to note that the multi-melta pintle weapon got a big jump in points, which makes it much less appealing, it's almost the same cost as the rhino! I think that the heavy bolter, now that it is Heavy 4, and lower cost is potentially a more suitable option

I was just thinking of the combi melter myself. Nice and cheap and probably wont live long enough to get a second shot, even if it does get a first
