I got some Deathwing Companions recently (and plan to convert another 5) and am at a loss as to how to paint them.

Anyone know why Forgeworld has them doing that weird segmenting? What color schemes have you all done? Do we know when green becomes a big thing in the Deathwing?

Yep, as mentioned, they follow where they have taken a wound defending their commander. So you can break the black armor up with bone as you see fit.

Deathwing in 40k use full bone, which is left up to interpretation given various lore, but could be meant to symbolize that they took a wound in totality when Caliban was destroyed.

It means you were badass enough to survive getting shot through the back by something powerful enough to make it through a fusion generator, your back plate, and into you.
