Never used the gloss versions of these, obviously they leave a gloss finish, but in what other ways are they different to the non-gloss?

They are slightly less heavily pigmented. They were designed for use with metallics as using the normal washes on these killed the metallic shine. It is a shame they have stopped doing them as I don't know what I will use instead for metallic shading. Maybe the new formula washes work well enough on metals that a special version is no longer needed.

I went out and bought a couple of pots from my LGS so I should be OK for a while. Maybe worth doing the same before they all disappear.

Gottcha.  I had seen some videos stating that the new Shades worked more like contrast paints (less staining on flat surfaces), not used them yet, but a bit worried how they will work say Nuln Oil over Leadbelcher.

As well as leaving a shiny finish (the regular washes did dull metallic finishes), they were supposed to run in to the recesses more and leave less "staining" on the raised areas.

The new (Contrast-based) washes are supposed to be similar in terms of running off the raised areas more. Obviously, if you want a gloss finish, you can simply paint over the areas with a gloss varnish afterwards ...
