I am going to start working on my Stargrave crew today. From an artistic point of view I have decided to limit the colours being used to create a certain vibe inspired by mainly Dark Sun RPG (90s era; art from Brom) and to a lesser degree of the Borderlands (only first iteration of the game) franchise. All models will be placed on bases with dry, cracked earth and the main colours being used would be yellow, orange and red. Brown would be reserved for pouches. In some cases other colours such as light blue, green or turquoise might be used for strong contrast although these would be limited in use.

That said the natural colour of the police uniform would be blue but as I said this won´t be an option for my project. The easy way out would be just to do the police in black with grey edge highlights although this route would only be feasible, if I don´t come up with anything better. The mini in question is from Artel W (Inspector). Necromunda for example has used for it´s police force a colour scheme of a black/yellow combination which looks pretty good. A future planned pirate NPC force will be painted in dark red/black so this colour combo is not available anymore.

What do you think would look good for the police of my setting?

You should look into the uniforms of the old British South Africa Police or anything from a more tropical region. Green and tan with some white accessories can work for a police uniform in that type of terrain.
