You can still play as the Sautekh Dynasty but now that choice represents a paint scheme rather than a fixed Detachment. If you are starting off with Immortals then Awakend Legion or Shatterstar Arsenal are good all-round Detachments but none are specifically Sautekh. I'll also echo Karhedron in that Sautekh is pretty much just a paint scheme and a keyword these days, with the detachments having rules tailored to different styles of play and/or specific units. The stratagems play heavily into the theme of the detachments and are very much worth looking at in addition to the main rule.
